Freeze-Dried Muscadine grape: a New Product for Health-Conscious Consumers and the Food Industry

Muscadine grape (Muscadinia rotundifolia [Michx.]) is a fruit crop native to America; it adapts well wide range of biotic and abiotic stresses have thus been grown vinified throughout the southeastern US for centuries. Currently, farmers grow approximately 5,000 acres almost 100 improved muscadine-grape varieties commercial use. Recent research demonstrated fruit’s significant contribution beneficial phytochemicals typical American diet; thereafter, demand muscadine grapes considerably increased. Its thick peels seeds, though, prevented wider public consumption. This publication aims introduce growers, Extension agents/specialists, general potential new, value-added product that makes much easier eat may diversify food processing industry.
